Lemon Asparagus Soup
When asparagus is in season, we double down and use it nearly in every meal. If we're not roasting, grilling or adding to frittatas, we love to add it to soups. For this recipe we had to feature this crisp and sweet spring veg. Great on its own, or served with our savory sage biscuits.
2 bunches asparagus, cut into quarters
3 tablespoons avocado oil
4 shallots, chopped
2 cups Brothee Roasted Chicken broth
1/4-1/2 cup fresh dill
2 tablespoons freshly squeezed lemon juice, from one lemon
Freshly ground black pepper
Heat avocado oil in a medium size pot on low heat. Add sliced shallots and saute until tender. Add chopped asparagus, and sautee for 4-5 mins. Add chicken broth and continue to heat on low for a few minutes. Bring to boil. Add salt and pepper to taste.
Pour mixture into a Vitamix, blender or food processor. Blend until creamy. Add dill, lemon and more pepper depending on preferred flavor. Serve with dill as a garnish and bon appetite!
