Roasted Cauliflower Soup
We make this easy three step soup almost once a week. With no fuss, you really can't get this recipe wrong, as it really works with whatever flavors you want to incorporate.
2 tablespoons avocado oil
1 Cauliflower Head
16oz. Brothee Roast Chicken Broth
1 tablespoon Entube Curry Paste (or your own blend of curry spices)
1 tablespoon Entube Harissa Paste (or your own blend of harissa spices)
1 teaspoon tomato paste
Salt and pepper to taste
Dollop of whipped garlic spread (optional for garnish)
Chopped Chives (optional for garnish)
Rough chop cauliflower, and toss with avocado oil. Roast for 40 min., and toss midway so both sides of cauliflower are nicely roasted. Heat up chicken broth to a simmer and add both Entube's curry and harissa paste or your own spices.
Remove cauliflower from oven, throw into blender, add the spiced broth and blend until smooth. Serve with some whipped garlic and chives or straight up. We enjoy it with a little jalapeño and lime sauce, salsa verde, or anything with a spicy kick.
